Baby Back Ribs

Summer has officially arrived and that means (to me) that it is BBQ ribs season! Served with corn on the cob and a salad, cole slaw, sweet potatoes, and you've really got something great to eat (unless you're a vegetarian, of course).


This recipe came to me from a former work colleague of my husbands over 20 years ago and I have no idea where she got it or whether she made it up. It is so remarkably easy you won't believe it, and the clean-up (of the pan, not your fingers or face) is almost non-existent. That said, it takes about 2 hours, but you can do most of it in advance, and then add the sauce and bake for the last half-hour just before eating.


Now, a couple of thoughts about the sauce. If you have a favorite store-bought brand (like KC Masterpiece or Sweet Baby Rays (our fave)), just use that. BUT, if you REALLY want to wow yourself/guests/loved ones, I think you should consider making a batch of Ina Garten's sauce from the BBQ chicken recipe in her Barefoot Contessa Cookbook. It makes A LOT and lasts seemingly forever -- I seem to always have some on-hand and don't make it more than once per year.
