Black Bean Soup, An Eclipse-Friendly Playlist, And Some Other Black & White Ideas





By now you have likely heard there is a total solar eclipse happening on Monday, April 8th, which will be visible from 11 states in the USA. As the next one to be visible in the US won't be for another 20ish years, there are hordes of people descending on cities and towns located in the path of totality. I happen to live in one such city, and my guest room has been reserved for years already!


If you are hosting some folks for The Big Event or are traveling for it (or want to celebrate it virtually), here are some ideas to get you in the mood...

  1. First, make sure you have appropriate eye protection. [Obviously not required of those celebrating in spirit only.]

Some ideas of edible treats: -- Black bean soup and/ or dip (recipe below for the soup) -- Black or white Russians (cocktails REALLY popular in the 1980's for those not in the know) -- Black and white cookies -- Oreos -- Black licorice -- Flourless or black-out cake, with whipped cream -- Blackberry anything (cocktails, dessert, whatever) -- Black olives (and/ or tapenade) -- Meringue (preferably chocolate chip)


I'll be serving some of those things, and wanted to take this opportunity to share the recipe for my black bean soup. It does take time, but is mostly hands-off, and, served with whatever toppings you want, makes for a tasty and pretty healthy eclipse food.

I use a mini-muffin tin for these almost-guiltless-sized treats (just liberally butter the tin and bake for about 10-12 minutes --keep an eye on them).
