Flourless Chocolate Cake: An Amazingly Simple Recipe

I have been making this recipe regularly since 1997 and I honestly think I have made it more than any other in my repertoire. I always have the ingredients on hand for flourless chocolate cake emergencies, and I often even have one (in some size or shape) in the freezer for emergencies, too. People like it so much, I'm often asked to share the recipe, which I do, but almost embarrassed by how simple it is to make.
I have found this recipe to be infinitely adaptable to any cake pan shape or size you want. The recipe below is for an 8" round cake, but as you can see above, it worked fine in a heart-shaped cake pan and I often make one-bite brownie-sized cakes using a mini muffin tin. Sometimes, I will make smaller, individual-sized cakes (maybe 4" round, or use small tart pans for a fluted edge) for more elegant presentations. As long as you butter the pan well, sticking should not be an issue. Fun idea: make the one-bite cakes if you have a guest who is on a diet or trying to be "good;" it hardly counts!
If you need or want ONE DESSERT RECIPE in your arsenal, this is absolutely the simplest and most-universally pleasing. Unless, of course, you don't like chocolate; in which case, check back -- I've got some other simple dessert recipes coming. Happy baking!!!
