When Mother Nature sees to it that corn and tomato season overlap, and that fresh basil is in abundance during this same growing season, I take that as a sign. So, when I see these items in all their glory, I change my plans and make this salad as soon as possible!
You know, I don't use the expression, "for the win" very often, so you should pay attention when I do. This fresh corn salad recipe is one you'll find yourself making whenever you can get your hands on fresh corn and want something other than corn on the cob. It's a delicious and healthy side dish for most summer meals (think: brunch, lunch, picnics, BBQs, snacks, and non-fussy dinners). Or add a grilled chicken breast on top, and you've got yourself one mighty lunch or dinner!
If there are more than 3-4 of you, or you'll want leftovers, you'll want to double the recipe!
