I may not be the Queen of Treyf (non-Kosher foods) -- my friend Marcy holds that title -- but I do enjoy my shellfish! And I really enjoy cooking tasty dishes which don't require too much prep work or clean-up.
Last night I made a slightly adapted version of Melissa Clark's Skillet Shrimp Scampi, and I highly recommend it. This dish includes orzo which takes on almost a risotto texture (YUM!), and really isn't very unhealthy (2 tablespoons of both butter and extra virgin olive oil). I will post the recipe on my homepage.
I added an entire package of fresh baby spinach (because, you know, vegetables matter), but would add more next time. In the recipe (from her cookbook, Dinner in One), Melissa tells you how to "veg it up" and the recipe includes parsley (which traditionally is included in scampi, but which my husband doesn't care for all that much and which I did not include).
