I don't know about you, but we eat A LOT of chicken at home. And, when we have a sizeable quantity of leftovers (like when I make a Costco run and buy a rotisserie chicken), it often means being more creative than the typical use of it in salads, sandwiches, and quesadillas. This week, I remembered chicken tortilla soup, which we really enjoy.


Most recipes I've seen call for cooking the chicken (breasts) in the soup and then taking it out and shredding it before adding it back in, which takes at least 30 minutes more than this one. THIS recipe takes less than a half-hour, uses the leftover chicken you have in the fridge, and yields at least 6 servings. And, while I am not typically a fan of store-bought ingredients, I am totally fine using the store-bought tortilla strips here (but feel free to make your own -- it's not hard).
