I'd like to think that, because this recipe calls for chicken tenders (or boneless skinless chicken breasts), it is healthy. But it isn't; sorry folks. It is, however, extremely tasty and crunchy, and would be a great dish to make for a super bowl party or anytime you are jonesing for pub food.


The star of this deliciousness is a new (to me) product from Trader Joe's: their Organic Elote Corn Chip Dippers. On their own, these chips are pretty spicy, but when you crush them and then pan fry them, the heat somehow dissipates into a flavorful bite, with just a touch of zip. (If you want more heat, add some cayenne pepper to the flour dredge or serve with hot sauce.)


They can be made using chicken tenders (as I did) or using boneless skinless chicken breasts. For serving, they can be dipped into ranch dressing, or you can go the Mexican route and have lime to spritz on them, and serve them with guacamole and/ or sour cream. They would also be FANTASTIC in soft tacos, which will likely be how I use the leftovers currently in the fridge.
