Zippy Corn Chip Crusted Chicken

A tasty and crunchy pub-type food easily made at home
Ingredients
1 pound chicken tenders or boneless skinless chicken breasts
1/2 bag of Trader Joe's Elote Corn Chip Dippers*, crushed into small pieces (pulse in food processor or take out your aggression by hand/ with a rolling pin).
1 cup all purpose flour
1/4 teaspoon cayenne pepper, if looking for serious heat (OPTIONAL)
1 egg
Avocado oil or other neutral high-heat oil (Canola, Safflower, Peanut, Vegetable, whatever you prefer)
Salt & Pepper
*If you really want to make this dish but aren't anywhere near a Trader Joe's, you can buy these chips (at least online) at Walmart or Amazon but expect to pay a lot more for them than you would at Trader Joe's.
Preparation
Salt and pepper the chicken pieces (both sides)
Bread the chicken: dredge each piece in flour (with cayenne pepper stirred in if you want to make this more spicy), then dip and coat in egg, and then coat with the smashed corn chips. I find using a dredging pan set is the best way to avoid dripping on the counter whenever I need to bread anything (I'm a clutz).
Heat oil (about a 1/4 inch deep) in a large frying pan over high heat. Once hot, cook the chicken for 3 minutes on each side, lowering heat to medium-high if it seems to be browning too quickly. Drain and enjoy.
